I’ve been making quite a lot of chutney recently, and the most successful is a combination of parsnips, bananas and curry, and I gleefully posted about it, and included the recipe.
First of all, thank you Philippa, http://seascapesaus.wordpress.com/ for helping me see a little typo, which I have now corrected… and secondly, I must learn to heed my own advice when cooking something for the first time: follow the recipe!
I thought the chutney was a little watery… it didn’t seem quite the same as other chutneys I’ve made… and when I was correcting the above-mentioned typo I discovered that I had missed a vital ingredient out – not of the recipe, but of the chutney I’d made. No sugar!!! I totally forgot to put any sugar in! So this morning back it all went into the pan, with sugar, boiled, and back in its pots! The colour has improved it no longer looks like baby food, more like a proper condiment!

Read the recipe is something I always have a hard time with. Somehow it ends up OK in the end. Be well.
