You have the best tea rooms in the world, you bake delicious scones to serve with your cream tea… but just occasionally you must have a few left over at the end of the day… so what do you do with them? Throw them away? No, obviously not! you let them dry out and then make a window display of them to tempt people in to try the ones you have just baked, topped with clotted cream and maybe traditional strawberry jam, or maybe lemon curd, or maybe cherry and port jam, or maybe they will have a cheese scone instead… and a pot of freshly made leaf tea…. That’s what you do with left-over scones (in our house there are never any left-overs!)
