I love old cookery books, and I am especially fond of ones which you used to get with kitchen appliances and kitchen equipment. This one must have come with a cooker my mum had with her G.E.C. cooker; it was published in 1961, but there are certain recipes which hark back to the war or even before the war, to times when people were not affluent, or there was not always certain foods available. One way of coping with shortages was to make ‘mock’ something, a version using other cheaper more readily available ingredients.
I came across a recipe for mock goose… gut as you’ll see it bears nor resemblance to goose whatsoever!!
Mock Goose
- 1 lb potatoes, peeled and thinly sliced
- 2 medium sized cooking apples, peeled, cored, sliced
- 1 large onion, thinly sliced,
- 2-4 oz grated cheese
- a very little powdered sage
- pepper and salt
- ¼pint vegetable stock or water
- ½ oz margarine
- grease a 1½pint pie dish thickly with margarine
- cover the bottom with a layer of potatoes, then layers of onion, pinch of sage, apple, grated cheese
- repeat layers to fill the dish and top with the remaining cheese
- pour in the stock, dot with remaining margarine
- bake at 4325 F, 225, gas 7, for 45 mins
It does sound rather strange… but might be nice, but not a bit like goose!
