I’ve come across two delicious Christmas cake recipes… one for a Polish apple and poppy-seed cake which I have tried and enjoyed (in fact I was rather greedy with it!!) and an Icelandic recipe which I have not tried but looks really yummy!

It was a nice, moist cake, with a firm texture which made it very nice to eat. I guess it would keep well too – although, I admit it was too delicious for this to happen if I was anywhere near it!

There are six layers to this cake with a prune mixture spread between them; it has to be kept for about five days so it becomes really moist and tasty! I’ve never eaten this but I love prunes, almonds and cardamom so I’m pretty sure I’m going to enjoy it… I hope the rest of the family do too, for the sake of my waistline!
