I saw a recipe for a layered Icelandic Christmas cake here on WordPress a little while ago, and it looked so interesting and delightful that I decided to make it. I bought the prunes ready for the filling, but things have been a little hectic so it has had to wait until tonight to be made…
The cake mixture is flavoured with almond essence and cardamom, which sounds divine, two of my favourite flavours, the filling is made from prunes and cinnamon and lemon… now I’m not that fond of cinnamon but I will follow the recipe because maybe the true delight of the spice will be revealed in combination with the prunes.
