Toor dahl

I had a lovely recipe for toor dal which I made an enjoyed… the only problem was that I made rather too much of it and as I was the only one eating it some of it had to go in the freezer!

I’ve now found another nice recipe… but I think rather than following it strictly, I will use my experience of cooking and just us the ingredients and cook to my own taste.

  • 1 cup toor dahl
  • ½ teaspoon ground turmeric
  • pinch of salt (or to taste)
  • juice of 1 lemon
  • ½ teaspoon brown sugary
  • 1 pinch kalonji (black onion seeds)
  • 1 tablespoon oil or ghee
  • 2 red chillies, or one dried red chilli (or less if you don’t want it too hot)
  • ¼ teaspoon cumin seeds
  • 3 garlic cloves
  1. cook the dahl with the turmeric, in sufficient water until it is soft (difficult to give exact times as it seems to vary with age of dah etc… I found 40 mins was enough) and mash, I like it fairly wet, but if it’s too sloppy for you, strain it and do it as you like it (keep the cooking water in case you need to add a little more later)
  2. fry the garlic, kalonji, chilli and cumin carefully until they are aromatic
  3. add the dahl with more of the cooking water if need be, cook very gently so it doesn’t stick to the pan and add the sugar, and add salt to taste
  4. when everything is mixed in, it is done!
  5. it is recommended to be eaten cold, but I can’t see why you couldn’t have it warm…. add the lemon juice before you eat it

I think this would be nice with naan bread or chapatis, or as a side dish with a curry… in fact I could fancy some right now!

Glad you have a sense of ha ha Lois. On another note could you please post a recipe for crumpets one of these days. The ones my wife makes are good but nothing like the ones back home in Old Trafford.

Oooh, crumpets… with lashings of butter! We had an open fire when I was little and there was nothing as nice as toasting crumpets over it! Did you do that when you were little?

Sorry but don;t remember doing that. I do remember roasting chestnuts on a coal shovel in the fireplace. I was only four or five but I had to go down the cellar to get the shovel because my father was afraid of the boogie man hiding down there, or so he claimed.

We used to do that too… and also put the chestnuts on the rim of the metal thing which went round the front of the grate… I can’t remember what it was called, was it a fender? It was black and made of metal and had a little vent in the front; it had a wide rim and we put the chestnuts there.
