Dinner

I made a beef casserole the other night and it was very nice. There was some left over, but not quite enough for two portions so I suggested I made some pastry and put it into a pie. Then I had another idea, one I have seen in recipes so often but never actually made, a cobbler. A cobbler is something cooked in the oven with a scone topping. By the way I pronounce scone as scone not scon… I just thought I would mention that because along with the cream team debate on whether jam or clotted cream should go on a scone first, the scone/scon dilemma is one that will exercise any group of British people!

There can be fruit with a cobbler topping, or a savoury stew… So I decided with our small amount of beef casserole left I would make up some savoury scones and do a cobbler. I added pepper and herbs (too much pepper and not enough herbs according to my husband) to my scone dough, cut them and put them on top of the bubbling beef and popped it into the oven for about 20 minutes, until they were golden brown.

I really liked our beef cobbler, and although scones do have fat in them (butter) it was not as much as if I had made a pastry topping… so we felt as if we had been very good… and went to the pub to celebrate!
