Waste!

I had a bit of a disaster, a culinary mis-hap… if I say rice, maybe that gives you a clue. I don’t over or under cook it, i seasoned it beautifully, it didn’t stick to the bottom of the pan, it tasted fine along with the chicken, sausage, mixed vegetables including onions, peppers, carrots and sweetcorn… Everyone enjoyed it, in fact my son and husband had two helpings…

The problem was that there were four of us sitting down to dinner… and I had made enough rice for another ten people, another ten hungry people! I had completely mis-measured the quantity. In my defence, there was a measuring cup in the sack of rice which I used, thinking my husband had put it there using a cup per person. I used three cups for four of us… I rinsed the rice thoroughly in cold water, before adding it to the pan of boiling water and home-made stock… and it was only as I came to put it into the serving dish that I actually realised my error… Oh how the family laughed!

I used some of the left over rice in soup, I ate some the next day for breakfast, and lunch… but in the end, I had to put the remainder in the food recycling bin, reflecting on what a waste it was… lesson learned, less definitely is enough!
