Thanks to my Facebook friend Joel who pointed me in the direction of this recipe, I now am confident that I can cook stuffed tomatoes! This recipe uses sausage meat, and if there was one problem I had, it was that the sausage meat was too finely minced… for the filling I think a coarser cut would be better.
Tomates farcies á la chair á saucisse
- 8 massive tomatoes
- 500g sausage meat ( I only used 3 tomatoes and as I had sausages which I had to skin, I used one sausage per person)
- 2 onions
- Two cloves of garlic
- 1 slice of bread
- Herbes de Provence
- Olive oil
- Salt and pepper ( as the sausage meat was well seasoned I only used pepper)
- Finely chop the onions and fry until golden in some of the olive oil
- Mix the onion, sausage meat, bread, minced garlic, salt and pepper
- Cut the tops off the tomatoes and scoop out the flesh to make into a sauce (I strained and rubbed it through a sieve as I have fussy eaters)
- Stuff the tomatoes and put their hats on – I secured them with a cocktail stick
- Put the tomatoes onto an oven proof dish, drizzle with more olive oil
- Cook for 75 mins at gas 6, 200 C
- I heated the strained pulp and juice to serve as a sauce
- Enjoy!
