Yum!

Many years ago we visited a friend of ours, Susan,  who lives near Lancaster; it was a hot and humid day and for lunch she had made a salad… now my husband isn’t very keen on salads but I love them. When we sat down for lunch it was not a green lettucey salad, but a water-melon and feta salad, with a few little other bits and pieces, and it looked very pretty… but I’m not very keen on water-melon. To be polite I ate it… and wow, it was delicious! The mixture of the cool fruity melon and the salty crumbly Greek cheese was lovely… we both ate all that was on our plate, and when a second helping was offered we both helped ourselves!

I had forgotten about this until I wrote about a Ukrainian salad I had come across, Salad Count Varantsov, and I had a very interesting comment from a fellow blogger and a link to a salad he enjoys… it’s the water-melon and feta salad again! I had lost my original recipe Susan had given me, so hurrah! I have a new recipe… guess what I had for lunch today?! I added my own touch by dressing it with pomegranate molasses and a sprinkle of rock salt and ground black pepper, and a few cress leaves… oh how yummy!

    I’m really glad that you’ve enjoyed the recipe. Next time I’ll try it with your suggestion. Pomegranate molasses and salt and pepper sound good to me. Can’t wait to try this recipe again, now that summer is here and the temperature’s rising swiftly.

    In my younger days we used to drill a hole in a watermelon and pour vodka in it and plug it up again and leave it for a weak. Two slices of that and you were spitting seeds at oneanother. Happy memories!

      I’ve heard of the same thing with vegetable marrows… my father-in-law once tried to do something like that with a marrow and brown sugar and it exploded!!! Oh what a mess!

    I love salad with watermelon. My boyfriend recently made us one with watermelon, arugula and feta. I’ve also had watermelon salad with cilantro. Now I’m really craving watermelon. It’s so hot here today and this salad would really hit the spot.
