Phoolgobi aloo

I love all sorts of spicy foods, and I love vegetables too… here is the simplest of dishes with just too main ingredients, phoolgobi (cauliflower) and aloo (potato) – that’s it! oh yes,there are lovely spices, but what could be easier? What could be more delicious? This is quite a dry dish, but sometimes that’s nice! I like it just on its own and if there is any left I quite like to eat it the next day cold!

  • 1 cauliflower cut into small florets
  • 2-3 potatoes cubed (depending on the size of the cauli and the amount of each ingredient you want)
  • 1 tsp cummin seeds
  • ¼ tsp mustard seeds
  • ¼ tsp nigella seeds (black onion seeds)
  • 1 tsp salt
  • ½ tsp chilli powder
  • ½ tsp turmeric
  • ½ tsp ground coriander
  • ½ tsp garam masala
  • 1-2 tbsp oil
  • chopped fresh coriander

(If your spices are not really, really fresh you might want to add a larger quantity – or if you like it a litle more hot, or less hot, adjust the chilli!)

  1. heat the oil and add the cumin, mustard, and nigella seeds and cook till they pop
  2. add the vegetables
  3. sprinkle on all the other ingredients except the garam masala and chopped coriander
  4. mix and cook slowly over a low heat, for about 15mins
  5. if you cook it slowly enough the should be no need to add water but if you think it is really necessary, just sprinkle on the tiniest amount – – you want this quite dry with the flavours all absorbed into the vegetables
  6. serve sprinkled with the garam masala and the chopped coriander
