I love all sorts of spicy foods, and I love vegetables too… here is the simplest of dishes with just too main ingredients, phoolgobi (cauliflower) and aloo (potato) – that’s it! oh yes,there are lovely spices, but what could be easier? What could be more delicious? This is quite a dry dish, but sometimes that’s nice! I like it just on its own and if there is any left I quite like to eat it the next day cold!
- 1 cauliflower cut into small florets
- 2-3 potatoes cubed (depending on the size of the cauli and the amount of each ingredient you want)
- 1 tsp cummin seeds
- ¼ tsp mustard seeds
- ¼ tsp nigella seeds (black onion seeds)
- 1 tsp salt
- ½ tsp chilli powder
- ½ tsp turmeric
- ½ tsp ground coriander
- ½ tsp garam masala
- 1-2 tbsp oil
- chopped fresh coriander
(If your spices are not really, really fresh you might want to add a larger quantity – or if you like it a litle more hot, or less hot, adjust the chilli!)
- heat the oil and add the cumin, mustard, and nigella seeds and cook till they pop
- add the vegetables
- sprinkle on all the other ingredients except the garam masala and chopped coriander
- mix and cook slowly over a low heat, for about 15mins
- if you cook it slowly enough the should be no need to add water but if you think it is really necessary, just sprinkle on the tiniest amount – – you want this quite dry with the flavours all absorbed into the vegetables
- serve sprinkled with the garam masala and the chopped coriander
