We are delighted to have a friend staying with us over the summer and she is a vegetarian. I am even more delighted! I don’t think I will ever be a complete veggie, but I do really like vegetarian food. It has been a real treat for me to be able to cook things using all sorts of ingredients that the rest of the family aren’t that bothered with… beans? yes please! Lentils and pulses? Oh yes! Salads and roast veg? Bring it on!
Because the rest of the family do eat meals without meat such as pasta dishes, risotto, jacket potatoes with various fillings, and some fishy things (well, some of the family eat fish) it has been wonderful to have had this emphasis on the vegetables, beans and pulses which I so love. I haven’t done anything complicated, thanks to Riverford Organics who bring us a lovely veg box each week we have plenty of delicious things to choose from.
Yesterday I made a dhal type dish with orange and Puy lentils and some leftover vegetable soup; I spiced it up with a little chilli for myself and we all enjoyed it with crusty bread! Mmmm, yum!
