Ulster fry

Most people know what a full English breakfast is, sometimes described as the full Monty (is that where the phrase came from?) but many think that the best start to the day is an Ulster fry! This Northern Irish speciality will set you up perfectly for the day ahead; it consists of a variety of items fried to perfection but usually includes specific foods such as bacon, eggs, sausages and different sorts of bread.

So what do you need… first of all sausages, they go into the pan first as they take the longest to cook, then the bacon… make sure it has some fat and a rind on it as this improves the flavour and helps it cook better – if you don’t like it you can always cut it off! Irish bread is amazing,and for breakfast you need potato and or soda bread (go for both of them, you won’t regret it!) Tomatoes… let them cook slowly so they are nice and soft, and of course you need black and white pudding.Black pudding has great flavour… you may be a little squeamish about its contents, but ignore that and just taste it!! White pudding is very similar to black pudding and is made from pork, pork fat, suet, bread, and oatmeal made into a sausage. Last of all you need eggs, as fresh as possible…
