Like many people at this time of year, suddenly we have an abundance of produce. last year it was apples, this year it’s tomatoes. Part of the reason is that the summer was not very consistent with weather and we didn’t have a lot of fruit on our vines; suddenly with the lovely warm September our tomato plants have gone mad and we are inundated! I am up to my ears in jam and chutney – I love making it but we don’t eat a great deal of it – and after the disaster when the freezer broke and I had loads of frozen stuff to get rid of and solved the dilemma by jam making, we don’t have anywhere else to put jars!
So what to do with all the tomatoes? There are only so many we can eat raw or cooked; I’ve made great pots of tomato sauce, tomato soup and tomato everything else you can think of… so now I am going to try drying them. I had mixed success with my dehydrator last year. Herbs were hopeless but apples were great. So I’m going to try tomatoes now… I’ll let you know how i get on!
