Stuffed pointy peppers

I had some lovely bright red and shiny pointy peppers the other week and just very simply stuffed them with goats cheese and bobbed them under the grill for just a few seconds. Yum!

Yesterday I not only saw a recipe for feta stuffed peppers, but saw some beautiful small very red pointy peppers in the greengrocer’s. I bought the peppers and today I’m going to try them with feta. I’m just wondering now, what else to stuff them with – I think the feta might need something else too… so maybe some of my newly home-dried tomatoes?

I have to say that the drying hasn’t been totally successful – the first lot took such a long time to dry that I turned up the heat and they became a little crispy – still tasty, but definitely crispy. The second lot just haven’t seemed to want to dry; they have dehydrated a little, but are still quite moist – but very, very delicious; I’m not sure how well they will keep though. So maybe chop up some juicy dried tomatoes, mix with the feta and stuff the pointy peppers, then maybe sprinkle with a little crushed crispy dried tomato? Season well and drizzle with olive oil? does that sound nice? I’ll let you know.
