I’ve never heard of a kabacha squash, green or otherwise, but we received one in our Riverford organics box, so I’m looking at recipes to use it. I could just make soup, or roast it in chunks and then put it into a risotto or something like that, but I wonder what else I could do with it. It actually looks more grey than green, but grey in an attractive way… I think I would quite like a jacket or shoes in that colour.
Apparently it’s good with red Thai curry paste… and… and… Well, there actually don’t seem to be many other recipes which are not soup, mash, fried, roasted,or just plain chunks of it with dashi or miso or maple syrup or a variety of other things.
So I’m going to roast it in its skin in the oven, and then I’m going to taste it and decide what to do next, and maybe, just maybe I’ll make my own red Thai curry paste and make a red Thai curry with kabacha squash!!
