The Welcome Guest’s Own Pudding…

…(Light and wholesome)

This is another recipe by Eliza Acton (her own receipt); I couldn’t find a Christmas pudding recipe by her but this one intrigued me. The ingredients are fine bread crumbs, thin cream, more bread, suet, crushed ratafia biscuits, candied citron and orange rind, zest of lemon, eggs, sugar. It is boiled in the usual way of puddings, and served with a clear fruit sauce (sounds intriguing) made from sugar, zest of lemon, brandy and a little arrowroot. It can then be decorated ‘tastefully’ with lemon peel, muscatel raisins, currants and candied peel… Maybe I should have a go at making the pudding and the sauce!!
