Beetroot… I love beetroot

Over Christmas time we  went to visit our friends who cooked a wonderful Sunday roast, and one of the accompanying vegetables was roast beetroot… oh it was so yummy! We have roast beetroot a couple of times since, and it’s now a real favourite. We like beetroot anyway, in beef casseroles, with sour cream, the traditional English way – in vinegar, in soup…

A twitterrer I follow is Vermilion Lane, @vermillionlane; her name is Andrea and she has the most amazing and delicious recipes on her website (as well posts about crafts and other interesting things)  I have some beetroot in our vegetable rack and by coincidence her latest recipe is for a roasted beetroot salad with arugula (not sure what that is… I think it is rocket) pecan nuts and feta or goats cheese… sounds a pretty yummy combination. I might very well have it for my lunch tomorrow but with watercress instead of arugula.
