I really like cornbread but have had utter and dismal failures when I’ve tried to make it before… as today is 4th July I thought I would give it one more go…
The recipe I used was so easy I wondered if maybe it was too easy… but I mixed everything together, put it into a baking dish, stuck it in the oven… and good gracious! It came out looking lovely, and what is more it tasted lovely!!
I shall certainly make it again, but I might try to do a cheesy one, or a cheese and chilli one, or add just a little more sugar and make it more of a tea loaf… the possibilities are endless!
Here is the recipe from an old cookery book that I followed:
- 1½ cups of cornmeal
- ½ cup plain flour
- 4 tsp baking powder
- 2 eggs
- 1 cup milk
- melted butter (the recipe said bacon fat but i hadn’t got any) I put less than the recipe said as I’m on my diet! I used about 10 grams
- I added a good pinch of salt and a teaspoon of sugar
- sift the dry ingredients together
- lightly beat the eggs, milk and melted butter or fat
- beat the liquids into the dry ingredients
- pour into a well-buttered dish
- bake at 425°, gas 7 for about half an hour (my recipe said 20 mins but it wasn’t nearly enough)


That goes good with grits,possum belly and black eyed peas.Yum yumm!

Possum belly…. not sure our local butcher has that! 😉
