Simple savoury tart

Here is a really economical recipe… how to make a delicious dinner from not much!!

  • enough short-crust pastry to line a 7½inch flan tin (6oz flour, 3oz  butter and shortening, water = 10 oz pastry)
  • 3 oz grated cheese
  • ¾ lb hot boiled potatoes
  • knob of butter
  • 1 beaten egg
  • 3 oz chopped streaky bacon
  • 2 medium tomatoes, skinned and sliced
  • salt and pepper
  1. mash the potatoes while hot and add a knob of butter, most of the cheese, half  the egg and seasoning, and beat very well
  2. spread on pastry
  3. cover with sliced tomatoes, bacon pieces, the rest of the cheese and egg
  4. bake in a moderate oven, 180–190°C, 350–375°F, gas mark 4,  for 45 mins
  5. serve hot or cold
