Here is a really economical recipe… how to make a delicious dinner from not much!!
- enough short-crust pastry to line a 7½inch flan tin (6oz flour, 3oz butter and shortening, water = 10 oz pastry)
- 3 oz grated cheese
- ¾ lb hot boiled potatoes
- knob of butter
- 1 beaten egg
- 3 oz chopped streaky bacon
- 2 medium tomatoes, skinned and sliced
- salt and pepper
- mash the potatoes while hot and add a knob of butter, most of the cheese, half the egg and seasoning, and beat very well
- spread on pastry
- cover with sliced tomatoes, bacon pieces, the rest of the cheese and egg
- bake in a moderate oven, 180–190°C, 350–375°F, gas mark 4, for 45 mins
- serve hot or cold

mmmmmm My Mam used to make this when the money was running out at the end of the week. Lovely.
