I do come up with some weird mixtures of things I eat; I add the strangest ingredients to my salads and have dried seaweed and a mixture of pepper and spices on my morning egg. Mostly my odd choices of ingredient mixing works, but sometimes it’s disastrous… so I won’t tell you about the butter bean dip I made… It wasn’t so much dipped as tipped, tipped into the food waste bin because it was really disgusting.
I love aubergines and I had roast one in the oven in some olive oil and then it had got abandoned in the fridge. I retrieved it today and it was still in perfect condition (it hadn’t been there that long, honestly!) wondered what to do with it… my dear Israeli friend had sent me some lovely recipes, but they were upstairs and I was downstairs… I had half an avocado and some mayonnaise… and I threw the three things into the blender – skinning the avocado but not the aubergine.
I blended it until it was a smooth khaki coloured dip – which may have been off-putting for some people, but not to me. I tried a spoonful just to check the seasoning… it needed none so crusty bread, khaki dip and some sriracha – and that was my delicious lunch! Strange though…
