I wrote about some great ideas for more interesting and healthy breakfasts which I read in an article by Becky Duffett. They were simple, practical and unusual but tasty sounding combinations of things to go on toast – yes, simple as that! Becky also wrote about how to increase vegetables in your diet – I prefer vegetables to fruit, and always eat plenty but even so, her ideas are so original I have now a whole load of different combinations of items to try and ideas to play with!
I wrote yesterday about her toast toppings, but she had sixteen suggestions for including more vegetables in your diet altogether:
- blended into smoothies
- topping off toast
- stirred into oats
- scrambled in eggs
- baked into muffins
- simmered in soups
- piled on pizza
- blitzed like rice
- twirled like noodles
- cooked into casseroles
- tossed in fresh stir-fries
- baked as fries
- stuffed with goodies
- whipped into dips
- minced in meatballs or burgers
- roasted to perfection
Not all of these ideas will be practical or appealing to everyone, there are a couple that much as I love vegetables raw and cooked, I wouldn’t eat – for example smoothies. I just don’t like them, however nutritious they are, I just don’t like the texture and apart from ice-cream, I don’t like cold things… well, I guess I might make an exception for some wine, but chilled beer is a real no for me… But away from wine and beer and back to smoothies. I really like soup so maybe some of the smoothie recipes could be adapted to a warm version… I must have a look and experiment!
I am not a very sweet-toothed person, so muffins would not be something I’d make for myself, but I love baking and cake-making so this is a good thought for the family – and maybe my writing groups would enjoy a muffin or two with their coffee?!
One of Becky’s ideas which my eye was immediately drawn to was ‘dips’, and I was especially pleased to see her suggested recipe was for a beetroot hummus, using roast beetroot. This certainly sounds delicious, I love beetroot, and having only recently discovered it tastes even better raw, I wonder what it would be like to use uncooked as opposed to roasted beetroot as Becky suggests? I must try and then let you know.

My grand daughter loves all her veggies and starts her day with some kind of fruit. Maybe that’s why she can twist herself into a pretzel. Amazing little girl!
