How simple, how simply yum

I seem to have been missing out on salads recently, but I came across this recipe and I’ve been inspired. I have olives, I may have walnuts (but I know I have other nuts which I could substitute), I always have lots and various of lovely olive oil, I have Parmesan and balsamic vinegar… I just need salad leaves!

  • mixed salad leaves
  • 3 oz Parmesan shavings (not gratings)
  • sun-dried tomatoes, drained and cut into strips
  • walnuts coarsely chopped
  • olives, stoned and chopped (sounds like people I’ve come acros in my life)
  • balsamic vinegar
  • the best olive oil (I prefer Greek but each to their own choice)
  • salt and pepper
  1. mix everything except the cheese, then drizzle with olive oil and balsamic vinegar and season
  2. top with the Parmesan shavings
