I have a random selection of books on the window sill just beside me where I write, and I was just sorting through them when I came across the little cocktail book I have, and on picking it up, the page fell open at this:
Zombie (original and authentic Carioca recipe)
- 1 oz Tropical Heavy Bodied Rum
- 2 oz Gold Label Rum
- 1 oz White Label Rum
- 2 teaspoonfuls Apricot Brandy
- ¾ oz unsweetened Pineapple juice
- ¾ oz Papaya juice
- 1 teaspoonful fine granulated Sugar
- juice of 1 Lime
- one green Cherry
- ½ inch Pineapple stick
- 1 red Cherry
- sprig of Mint
- powdered sugar
- shake well with plenty of cracked ice
- pour unstrained into a 14 oz Zombie glass
- float a splash of 151 proof Tropical Heavy Bodied Rum on top
- spike on a toothpick in the order named one green Cherry, ½ inch Pineapple stick, 1 red Cherry, to decorate
- decorate with sprig of Mint
- sprinkle powdered Sugar over all

~ I’ve retained all the capital letters,
~ Carioca is either a native of Rio de Janeiro or a Brazilian dance similar to a samba
~ Zombie cocktail is a blend of juices, rum, and liqueur
~ A zombie glass is the tallest, most narrow cocktail glass, with a large capacity to highlight colourful drinks
~ Tropical heavy rum is the darkest, richest, heavy bodied rum
~ White rum is a light-bodied rum with a soft, sweet taste
~ Gold rum, also known as amber rum, provides rich, smooth flavours through being aged in barrels
~ the recipe is from the Professional Mixing Guide (1951)
It sounds very nice and with an exotic appearance, but probably best consumed in small quantities! Rum is a very powerful flavour, as my dad discovered when young, one Christmas – forever known as ‘the rum Christmas’.
My featured image is not a Zombie as you can no doubt tell from the shape of the glass. I have now forgotten what it was, only because it was a very long time ago that I tried it!
