Something quite simple

Looking at that little hand written recipe index again, and I wonder why they were noted down and who the recipes were intended for – a mum jotting things down for her children, their favourite dishes maybe – someone writing down a friend’s recipe they enjoyed on a visit to them – an aunty/grandma/neighbour’s lovely meal they had shared? Here is something quite simple, as you will gather from the quite simple title:

Vegetable dish

  • potatoes
  • fried onions
  • bacon rolls
  • dripping
  • Oxo cube
  1. layers of potatoes
  2. layers of fried onions
  3. layers of bacon rolls
  4. repeated till the dish is full
  5. cover with layer of potatoes and pats of dripping
  6. oxo cube for gravy
  7. bake in oven

This is a real dish which someone made from what they had left over, and which was so delicious that they wrote down what they used and what they did so they could repeat it another time. Marvellous!!
