A couple of weeks ago I was eating out at a buffet-style restaurant and came across tabbouleh which I had not had for years. Wow, so delicious! I’ve been making it ever since using different grains including millet and couscous and lovely fresh herbs from the garden.

I came across some flageolet beans in the freezer today and decided to use them instead. So… lots of lovely herbs including mint

Tomatoes, red onion, cucumber, mint, chives, parsley, seasoning and olive oil – Greek today to support the Greek economy
Stir it all together
Eat




Well it was you who introduced me to it back sometime in the 80s and yes I too rediscovered it last summer

I have to say it did not work quite as well with beans… too wet somehow!
