Years go I made a chutney using parsnips and it also contained curry spices… I was not too sure, even as I made it what it would taste like, but it was delicious, really delicious! We didn’t have a lot of success in our garden last year because of the wet weather but one vegetable which cropped well was parsnips… I know, I’ll make that delicious curried parsnip chutney… if only I can find the recipe.
I have literally hundreds of cookery books and recipes, I’m not exaggerating .. but can I find the parsnip chutney recipe? No I cannot. It was a very long time ago that I made it, and I have had a recipe book cull since, but I thought at least one book would have something which I could adapt even if it wasn’t exactly the same… but no.
I know, I’ll go to the book shop in town; they have a lovely selection of recipe books, I’m sure one of them will contain the elusive recipe. I went to the bookshop, I scoured the recipe books, there were recipes for all sorts of bizarre fruits and vegetables (a lot of peach, passion fruit and pomegranate chutneys) but no parsnip chutneys.
I trawl the internet and although there are references to a recipe… so far I have a banana and parsnip chutney, and a country chutney… I need to by some bananas .. I’ll let you know how I get on! In the meantime, if you have a recipe for curried parsnip chutney, please share it!

ah you’re a tease 😉 ! Here I was ready for a recipe but I’ll stay tuned! I love ‘snips, they’re a good old fashioned veggie and actually can be hard to find in the South of Texas!

I think they need to be frosted to become really sweet, so maybe that’s why they don’t like Texas sunshine!
