I came across some burrata, a soft fresh Italian cheese made from Mozzarella and cream and snatched it up with an exclamation of joy because I’d seen a delicious sounding recipe here on WordPress. I bought the cheese, I’ve got it at home in the cheese box… but can I find the recipe? Can I heck!
I can’t remember who posted it, or what the recipe was… I thought it was spanokopita, but no, it wasn’t that, I thought it might have been stuffed in dates, but no, it wasn’t that either! Burrata is a creamy soft cheese, usually made from buffalo milk, I believe, and coming from the Puglia region and traditionally wrapped in asphodel leaves… how exotic! I don’t even know what asphodel is, except as something mentioned by poets! It is best eaten fresh, simply with crusty bread, or with salad or prosciutto… or all three!
No doubt I shall find a lovely recipe to use it in… and I bet the moment the last thoughtful has been eaten, I’ll find the recipe!
