I have a lovely butternut squash which I bought because they always looks so nice, they are almost an ornament in the kitchen… but also of course they do taste good. I am dithering over what to make, and I think really,, with it being so very chilly today it has to be soup!
I’ve come across some interesting recipes for other things… I am more of a savoury person than sweet, so some things with squash are not quite to my taste, but how about Beetroot, Butternut and Goats’ Cheese Tartlets , or Conchiglie with Chorizo, Chickpeas and Roasted Butternut Squash, or this recipe – Butternut Squash and Goats’ Cheese where you use the squash shell as a serving dish? That would look great wouldn’t it?! And as for soup this sounds delicious, Carrot, Butternut Squash and Coriander Soup recipe – beautiful combination of ingredients! Dahl, a favourite of mine… this sounds good – North Indian Chickpea, Lentil and Butternut Squash Curry!

butternut – I cut in half, scoop out seeds , fill cavity with water, tsp butter and cinnamon or other times just a little bacon in micro wave. .

Wow… just in the microwave? Sounds wonderful! I must try this… we have a new microwave so i hope it doesn’t explode or anything!
