My mum died nearly thirty years ago but every so often I find a little something which brings her close to me… and today, in among a lot of random other stuff I found a couple of hand-written recipes from her.
I love gingerbread, and I’ve posted a few things about it here… here is a recipe that my mum copied form somewhere or someone, many, many years ago:
Monica’s gingerbread
- 1 cup of milk
- ¼ lb margarine
- 2 tablespoons black treacle or golden syrup
- 2 cups of self-raising flour
- 1 cup brown sugar
- 1 teaspoon ground ginger
- 1 teaspoon mixed spice
- ½ teaspoon or pinch of bicarbonate of soda
- heat the milk, margarine and syrup in a pan but do not boil
- mix the dry ingredients together well then add the mixture from the pan
- beat well, pour into a greased and lined pan
- cook at gas mark 4 (350F, 180C) for 45 mins near the bottom of the oven
I think I would add more ginger as I like it quite spicy, but if you like just a fine flavoured cake or tea-loaf, then this is for you!
