Next weekend we are having friends joining us for lunch and I am just planning the menu… and since I seem to have conquered my difficulties with making soup, I think that is what we shall start with… beetroot soup! I love beetroot… as soup, as a salad with sour cream and chives, roast… their colour is just glorious!
So after beetroot sup… how about pulled pork? I was intrigued by the sound of it before I ever tried it, and now I have tried it I really do like it. It is also a very accommodating dish, and since our friends are such good company, I can imagine we might be chatting for quite a while before we actually sit to eat lunch… so pork just gently sorting itself out in the oven would be perfect. Then some green vegetables, since it is the season for sprouts maybe we shall have sprouts, and some potatoes, maybe jacket potatoes with the insides removed, mashed with mayo, cheese and paprika, returned to the oven to heat through and crisp… this is sounding good!
So dessert… we will have a cheese board (on my new beautiful slate board!) but what should we have for dessert? We have some blackberries in the freezer, so maybe a pie or a crumble, we have some raspberries so maybe a light dessert with crème fraiche… I’m sure something will occur to us!
Whatever menu we decide on we will be in good company!
