I mentioned yesterday that I was going to make lentil soup today… and I did! I actually made it up as I went along and it worked out very nicely… perhaps I am getting more confident with soup making. It was very quick to make as I used yellow split peas as well as little orange lentils, both of which cooked very quickly. I boiled them until the were soft along with half a red onion which had been sitting around for a while. I just added black pepper as I’d read that adding salt to pulses and legumes while they are cooking makes them tough, and that you should season them afterwards… which I did.
While the lentils were cooking I fried a very small amount of chopped up smoked bacon and about an inch of finely sliced leek in some olive oil. When the pulses were soft, I put them and the onion in the blender and whizzed them up and then poured them onto the bacon and leek. Now I added some rock salt, and I also added a splash of sweet chilli and garlic sauce, not too much, just to warm it up a little! I sprinkled on some dill seeds from what we had grown last year… and there was soup!
