Sometimes the simplest things are the tastiest… this salad looks like tomato and feta… in fact it is water melon and feta, with a sprinkle of red onion and in this case a few green bits to make it pretty. All it needs is a drizzle of olive oil, a little salt if you’re going to eat it straight away, otherwise it draws all the juices from the melon and leaves a big puddle, and a grind or two of pepper. It is as simple as that!
