I’m not a great one for puddings, desserts or sweet things, but I seem to be the odd one out in my family! Any family get together includes lots of yummy and delicious sweet things, as well as the savoury and although I don’t often try any, it always looks jolly good! There are family favourites which appear on most occasions, and this used to be one of them. It hasn’t appeared recently, maybe its time for a return of Aunty Beryl’s Australian flan:
- 30 white marshmallow
- 1/4 pint milk
- 1/2 pint double cream
- 2fl oz flavouring, for example, orange juice, coffee, rum, etc (creme de menthe gives ‘a most effective green colouring’ – according to Aunty B)
- 6 oz crushed chocolate wholemeal biscuits
- 2 oz melted butter
- small piece of dark chocolate grated
- mix crushed biscuits and melted butter and press into a flan ring or shallow round dish, put somewhere to set
- melt marshmallows in the milk in a double saucepan
- add flavouring when cool
- whip cream until it just holds its shape and stir carefully into mallow mixture
- pour over biscuit base and chill overnight
- decorate with grated chocolate

I thought they made upside-down cakes in Australia. What do you call a boomerang that won’t come back?

Upside down cakes always look so yummy with all the fruit soaking into the cake!

I think I did…. I was so busy seeing a delicious upside down cake I completely missed the down-under bit!!! Maybe I should make and upside down cake and see if I talk with an Australian accent!!
