Simply teriyaki

last year I had a great day out at the BBC Food fair in Birmingham; we had lots of samples, tried lots of nibbles, and I certainly came away with bags of yummy things. One of the things I tried, but did not buy at the time was some chicken cooked with teriyaki sauce. It certainly was very delicious but by this time I was pretty overloaded so it was only when I returned home and later went shopping that I bought a bottle of teriyaki sauce… and as with many things it gradually moved to the back of the cupboard and was forgotten.

Yesterday I had a hungry son… I also had some leftover sticky rice and some chicken… What to do? inspiration! Heat the rice in the microwave, put a little oil in the pan and add chicken and dash a good whoosh of teriyaki sauce onto it as it’s frying. The sauce caramelises, coats the chicken – throw heated rice into the pan and just stir round to pick up the flavour, arrange all on a heated plate… happy son!

Now sukiyaki, that’s something totally different… who remembers this?
