From the Spry cookery book… a recipe for six people (I thought it should be seven since it’s a seven cup pudding!)
- 1 teacup flour
- 1 teacup sugar
- 1 teacup currants
- 1 teacup raisins
- 1 teacup Spry
- 1 teacup breadcrumbs
- 1 teacup milk
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon spice
- ¼ teaspoon bicarbonate of soda
- 1 egg, beaten
- 1 finely chopped apple
- grease a basin
- rub Spry, flour and breadcrumbs together
- add sugar, fruit, bicarb, apple, egg, milk and mix
- put mixture into basin, cover with greased paper
- steam for 3 hours
The recipe doesn’t specify but I would guess it would be served with custard!

Spry is a vegetable cooking fat – I’m not sure it is still made, but I came across a little Spry cookery book which I think was published in 1937. I guess I’d use butter or margarine instead.

I haven’t yet – we’ve had our window frames replaced and had to move lots of things, and as I was emptying my bookcase I came across the Spry book so I’m going to have a go at some of them – we have a family get together soon and everyone brings a cake, sounds an ideal opportunity to try – there is a saffron cake which sounds yummy, also a walnut cake!

Well the recipe for walnut cake is just the basic sponge sandwich with 2 ounces of walnuts… the coffee cake is ditto but with a tablespoon of coffee essence… so it will be easy enough to combine the two!! I think I ought to have a practice bake before the family party… we ought to try it first, oughtn’t we 😉 !!

my Nana’s recipe used beef fat/suet for shortening. I’m considering beef tallow this year. I’ve used butter but the pudding seemed less firm, softer. Tasted fine.
