Yummy gluten free choc buns!

It’s only recently that I have been cooking with gluten-free flour for a new friend in my writing group. I use Dove’s self-raising gluten-free flour and everything I’ve made has turned out so delicious that everyone else in the group has eaten them too! The recipe I used worked perfectly:

  • 5 oz caster sugar
  • 6 oz butter
  • 7 oz gluten-free self-raising flour
  • 2 tbsp cocoa
  • 3 lightly beaten eggs
  • 2 tbsp milk
  • 1 tbsp vanilla essence/extract/bean paste
  1. beat the butter, sugar and vanilla together until light and fluffy
  2. add eggs and flour and cocoa  alternately and beat lightly
  3. add the milk if necessary, and more or less as you need
  4. put into bun/muffin cases/tins and bake for 15/20 mins for small buns, 20/30 mins for muffins, 180°C, 400°F, gas mark 6 – they will be done when the tops feel light and spongy
  5. dust with icing sugar
