Cheesy potatoes

I’ve just entered a Welsh cheese competition in the hope of winning some lovely Welsh cheese; what recipe would I use teh cheese for if I won? I would like to win the Tintern… and this is what I said i would do_

 I would use Tintern for my favourite recipe – left over jacket potatoes, halved, skins scooped out and the potato mixed with lots of cheese and mayonnaise, pepper and a little sweet chilli sauce (not too much) mashed up and piled back in the skins, topped with grated Tintern and a little paprika and put in a hot oven for about 15 mins until the cheese has all melted into the potato mmmm yum!
