Here’s an easy recipe from over a hundred years ago:
Jumbles
- ¼ lb flour
- ¼ lb treacle
- ¼ lb demerara sugar
- ¼ lb butter
- 1 tsp ginger
- melt the butter and sugar together in a pan
- add to the flour, sugar and ginger and mix well
- leave until cold
- when cool, take small walnut sized spoonfuls of the mixture and drop onto a baking tray
- bake in a medium oven for 10 minutes
- take from the oven, lift from the baking tray and drape over a rolling pin and allow to cool
They should be chewy and crispy at the same time!
