Should you have enough apples to give you four pounds when grated, then this might be the recipe for you – if you like cider that is, which I don’t. This comes from Ambrose Heath’s 1950’s book an home brewing, home-made wine, liqueurs etc., ‘Home-made Wines and Liqueurs.’.
Apple Beer
- 4 lbs grated apples
- 2 lbs sugar
- 2 oz root ginger
- 1 level tsp each cinnamon stick and whole cloves
- pour 4 gallons of boiling water over the grated apple
- stir each day for a fortnight
- strain and add the sugar, ginger, cinnamon and cloves
- pour into a cask and bung tightly
- in 6 weeks it will be ready to bottle, and makes a cider-like drink
