A curious combination

I love salad… and I love a combination of textures, flavours, sour and sweet, bitter, salty… so into the bowl goes whatever leaves are to hand, whatever vegetables are to hand, whatever herbs, and fruit, yes fruit! Anything else which springs to mind so for example, left over rice, grated cheese, seeds, nuts, and dressed with olive oil (lots!) a dash of vinegar (not too much) salt, pepper, a few spoonfuls of yoghurt or hummus… so I end up with a different salad every time and a different mouthful every time!

Having said that, generally a salad would be lettuce and other leaves, tomatoes, peppers, onion, celery, probably grated carrot and chopped apple, grapes, sesame/poppy/chia seeds, linseed… Oh yum! Today as I was making a salad to put on the table beside a big bowl of chilli and some noodles I noticed I had roasted an aubergine in olive oil so I chopped it up and in it went. Then not having a sweet element, I rootled in the cupboard and found some ready-to-eat prunes… A curious combination, aubergine and prunes, but wow, they worked so well! This is definitely something I will do again!
