It’s only recently that I have been cooking with gluten-free flour for a new friend in my writing group. I use Dove’s self-raising gluten-free flour and everything I’ve made has turned out so delicious that everyone else in the group has eaten them too! The recipe I used worked perfectly:
- 5 oz caster sugar
- 6 oz butter
- 7 oz gluten-free self-raising flour
- 2 tbsp cocoa
- 3 lightly beaten eggs
- 2 tbsp milk
- 1 tbsp vanilla essence/extract/bean paste
- beat the butter, sugar and vanilla together until light and fluffy
- add eggs and flour and cocoa alternately and beat lightly
- add the milk if necessary, and more or less as you need
- put into bun/muffin cases/tins and bake for 15/20 mins for small buns, 20/30 mins for muffins, 180°C, 400°F, gas mark 6 – they will be done when the tops feel light and spongy
- dust with icing sugar
