Cooked salad dressing

I’m not sure I am going to try this 1937 recipe for what I guess would be a sort of salad cream – my  husband might like it, but I don’t really think I would.

If anyone wants to try this recipe from the Spry ‘What shall I cook today?’ book, here it is:

  • 1 egg
  • 1 large tsp flour
  • ½ tsp sugar
  • ½ tsp mustard
  • ½tsp salt
  • ½ gill milk
  • ½ gill vinegar
  • ½ gill water
  • 1 oz Spry (vegetable fat)
  1. mix the flour, sugar, mustards, salt and egg to a smooth paste
  2. add the other liquids and heat using a bain marie, double saucepan or basin over boiling water (don’t let the basin touch the water)
  3. stir until thick and add the Spry
  4. stir occasionally until cold
  5. put in a jar and store
