Ginger fig pudding

Ginger fig pudding – how delicious does this sound! Without more ado, here ’tis:

Ginger fig pudding

  • ½ lb self-raising flour
  • ¼ lb suet (use vegetarian suet if you like!)
  • 1 tsp (or more) ground ginger
  • ¼ golden syrup
  • ¼ lb Barbados sugar
  • ½ lb cooking figs soaked in ½ pint water overnight, stalks removed and chopped
  • 1 egg, beaten
  • butter
  1. butter a mould and decorate with a few slices of the figs dipped in melted butter
  2. when the figs are set add the golden syrup
  3. mix flour, suet, ginger and sugar add figs
  4. mix in the egg
  5. and add water figs were soaked in
  6. turn into a prepared pudding basin, cover with well-greased paper and steam for 3 hours

This would be delicious with cream, custard or ice-cream – especially ginger ice-cream!
