Ginger fig pudding – how delicious does this sound! Without more ado, here ’tis:
Ginger fig pudding
- ½ lb self-raising flour
- ¼ lb suet (use vegetarian suet if you like!)
- 1 tsp (or more) ground ginger
- ¼ golden syrup
- ¼ lb Barbados sugar
- ½ lb cooking figs soaked in ½ pint water overnight, stalks removed and chopped
- 1 egg, beaten
- butter
- butter a mould and decorate with a few slices of the figs dipped in melted butter
- when the figs are set add the golden syrup
- mix flour, suet, ginger and sugar add figs
- mix in the egg
- and add water figs were soaked in
- turn into a prepared pudding basin, cover with well-greased paper and steam for 3 hours
This would be delicious with cream, custard or ice-cream – especially ginger ice-cream!
